Makes 4 servings
For the Peaches
2 tablespoons sugar
1 cup elderflower liqueur
4 fresh peaches, cut into 1⁄2–3⁄4-inch slices
1 cup DIY Coconut and Date Muesli
For the Muesli
1 cup organic rolled oats (not instant—choose old and rolled; that’s the stuff filled with nutrients)
1 cup organic irish or steel-cut oats 1⁄2 cup sweetened shredded coconut 1⁄2 cup finely chopped dried apples 1⁄2 cup finely chopped dried dates 1⁄2 cup golden raisins
1⁄2 cup slivered almonds, toasted
to make the peaches
1 In a large mixing bowl or zip-top bag, toss all of the ingredients together until fully incorporated.
to make the muesli
2 In a large bowl, whisk together the sugar and elder- flower liqueur.
3 Place the peaches in the bowl, completely submerging them. Allow them to macerate (or soften) for at least 3 hours, or overnight.
4 Pour the muesli into 4 bowls and serve it topped off with the macerated peaches.
