Candice’s Arugula-la Salad

Simple for Suzie Homemaker in Heels.. .

2 tablespoons extra-virgin olive oil

2 tablespoons fresh lemon juice

Pinch sea salt

3 cups arugula

1 red onion, halved and thinly sliced (preferably on a mandoline)


In a large salad bowl, add the ex virg olive oil, lemon juice, and salt together in a large bowl. Add the onions and the arugula and toss to coat. Coat well and serve divided on small plates. Goes fabulous with crab cakes, a roasted veggie panini or a cup of roasted red pepper soup. Dee-lish sister!
