Dark Chocolate Spiced Molé

Holé Molé! It’s getting chilly outside and fall has officially arrived. My favorite thing? To cozy up on the couch with a warm, steamy bowl of chocolate mole! Made with my favorite Pure Dark chocolate and an arsenal of aromatic spices, this rich chocolate mole recipe is much easier than you think my friend! Give this one pot dump-and-stir recipe a go. Fall into change.

Candice’s Dark Chocolate Spiced Mole

For the mole sauce:

1 tablespoon olive oil
1 med. onion, finely chopped
2 cloves garlic, finely minced

1 teaspoon cinnamon

2 T chipotle peppers in adobo sauce  (more or less for desired heat)

1 cup water
¼ cup Pure Dark chocolate, (slab serious 15% cacao)chopped
1 28 oz can diced tomatoes, with juice

For the Chicken:

1 tablespoon olive oil

2.5 lbs boneless skinless chicken breasts, or legs + thighs (**for legs or thighs, cook for 10 additional minutes)

1 tsp sea salt to taste

1-    In a large stockpot on med-low heat, add 1 tablespoon of olive oil, sautee chopped onion, garlic until translucent and fragrant, approx 3-5 minutes.

2-    Add diced tomatoes, chopped chipotle peppers (more or less for desired heat) and cook on low for approx 20 minutes.

3-    Season with salt and Pure Dark chocolate. Stir to melt chocolate. Cook for another 10 minutes or so. Taste test to see if there is enough depth to the flavor of the mole. Feel free to adjust with the seasonings and

4-    Add ½ cup of water and cinnamon

5-    Mix in food processor until smooth, use 1/2 C of water if needed, for that velvety texture of a true mole.

6-    Place a large stockpot over medium heat, add the additional tablespoon of olive oil.   Place chicken in pot and brown for a few minutes on each side. Use tongs to flip. *Note: Chicken legs and thighs will require approx 5 more minutes per side to brown than chicken breasts

7-    Cover chicken in pot with mole sauce, and simmer for 30 minutes (40 minutes for legs and thighs). Stir occasionally, adding more water if necessary, until chicken reaches an internal temperature of 165 degrees. Enjoy with a side of rice + mole sauce on top, garnish with Pure Dark chocolate shavings.
