Need a fresh, green vibrant way to stay fabulous and healthy as a whistle this fall? Immunity boost it with this fall greens salad… Simple, easy and great for nurturing that hot bod! xx ♥ck

Fall Greens Salad

1/4 cup sunflower seeds

1/2 bunch kale, chopped

1/2 bunch Swiss chard, chopped (I love Rainbow Chard, but any variety will do)

1 cup butternut squash ribbons (thinly shaved raw slices)

1/4 cup dried cranberries

2 tablespoons crumbled chevre

Orange Vinaigrette

1/2 cup orange juice

1 tablespoon Dijon

1/4 teaspoon sea salt to taste

1 tablespoon olive oil

1 teaspoon herbs de Provence

**Peel and halve squash lengthwise. Using a vegetable peeler, slice down the length of the squash to create long ribbons.

    Wow, amazing! I’m a granola junkie, and sometimes I get quite annoyed with the huuuuge amount of sugar and artificial stuff on some bars I’ve sampled. I’ll certainly make these for a breakfast (with some “cafe con leche” – coffee and milk), and for Christmas gifts to my office mates – beats out cookies and fruitcake! One question – what’s the calorie count (at least approximate) of these? Just curious. Greetings from Venezuela!

      I added all the calories up of the ingredients and it’s an unbelievably high number! you’d have to make over 25 servings out of one batch for these to compare to any store bought granola bar calorie numbers. I even went out and bought the cookbook but was very disappointed to see this recipe wasn’t in there. can anyone shed some light? if my numbers are correct there is no way I’m eating these, sad :(

        Ladies, this recipe wasn’t about calorie saving, it was about making a homemade treat that is wholesome + doesnt contain chemical or processed ingredients! Enjoy! :) Not everything in life has to be over the top healthy for ya!u00a0 Enjoy whatever you like in life! xx
