Fall Greens Salad
1/4 cup sunflower seeds
1/2 bunch kale, chopped
1/2 bunch Swiss chard, chopped (I love Rainbow Chard, but any variety will do)
1 cup butternut squash ribbons (thinly shaved raw slices)
1/4 cup dried cranberries
2 tablespoons crumbled chevre
1/2 cup orange juice
1 tablespoon Dijon
1/4 teaspoon sea salt to taste
1 tablespoon olive oil
1 teaspoon herbs de Provence
**Peel and halve squash lengthwise. Using a vegetable peeler, slice down the length of the squash to create long ribbons.
