BBQ Chicken Chop Salad with Smoky Paprika Vinaigrette

BBQ Chicken Chop Salad with Smoky Paprika Vinaigrette

Perfect with leftover BBQ chicken on a hot summer/fall day, try this combination paired with a fresh grilled flatbread pizza and pair with a glass of Sancere or Pinot Grigio on that last summer day. Cheers.

Serves: 6

Ingredients:
For vinaigrette
2 tablespoons olive oil mayonnaise
1 tablespoon olive oil
2 tablespoons lemon juice
1 teaspoon smoked paprika
1/4 teaspoon sea salt

For salad
4 cups Romaine lettuce, finely chopped
2 cups leftover BBQ chicken, skin removed, finely chopped
2 tomatoes, diced
1 ear grilled corn, shaved
1 avocado, cubed
2 tablespoons feta cheese
2 tablespoons cilantro (optional)

Directions:
1. In a large mixing bowl, whisk together all vinaigrette ingredients until smooth.
2. Add lettuce, chicken, tomatoes, corn, avocado, and cilantro to bowl. Toss to combine with dressing.
3. Divide salad onto plates. Top each serving with feta and cilantro, if using.

    I am appalled at the hidden fat/cals at this restaurant x… who is it?! My husband will sometimes opt for a caesar thinking he’s eating healthy but he might as well be consuming a burger! If the real Caesar ate like this he’d been dead from heart attack well before the Ides of March murdering.

      Oh Lordy, they are actually almost always made with copious ammounts of mayo and egg yolk, oil ans cheese.. croutons just add to the fat! So try this Skinny Versh at home! Here weeegoooo! gogo!! ha!

      FYI – The caesar salad actually gets the name from the chef who first made it in 1924, Caesar Cardini and has absolutely nothing to do with the other historical figure! ;o)

    Oh Lordy, they are actually almost always made with copious ammounts of mayo and egg yolk, oil ans cheese.. croutons just add to the fat! So try this Skinny Versh at home! Here weeegoooo! gogo!! ha!

    My God! I was in a Mom-and-Pop Italian restaurant here in Venezuela, and a friend ordered a Caesar salad last week, when I saw the ingredients and sauces (blue cheese by the handful! Mayo galore!) and those oily croutons … I asked a nutritionist pal to make a guesstimate of calories, and she was appalled to say it could’ve been a 900-ish calorie salad! Eek! Reminds me of those “chef salads” of the 80s with loads of meat. Nice to see a slimmer version, I’ll make sure to try this. BTW I watched “Cook Yourself Thin” in my TV last night, you guys rule!
